SMOKED MEATLOAF
INGREDIENTS :
- 5 LBS. LEAN GROUND BEEF
- 2 1/2 LBS MED GROUND BEEF
- 2 1/2 LBS GROUND PORK
- 2 EGGS
- BREAD CRUMBS
- FINELY CHOPPED OREGANO & SWEET BASIL
- 1 PACK ONION SOUP MIX
- 1/2 CUP OF THE BEARS SPICE RUB
- 1/2 PACK OF BACON
ASIDE FROM THE BACON ADD ALL THE INGREDIENTS INTO A LARGE MIXING BOWL, & USE YOUR HANDS TO MIX IT ALL UP
ON A STRETCHED OUT PIECE OF PARCHMENT PAPER, PUT ALL THE MEAT MIX ON IT.
THEN ROLL IT INTO A TUBE SHAPE.
TWIST THE ENDS THEN PLACE IT IN THE FRIDGE FOR ABOUT AN HOUR
PREP YOUR SMOKER SO THAT THE TEMP HOOVERS AROUND 250 - 300
TAKE YOUR MEAT OUT OF THE FRIDGE, & UNWRAP INTO A ALUMINUM ROASTING PAN
TAKE YOUR BACON THAT HAS BEEN CUT IN HALF, & LAYER IT ACROSS THE TOP OF THE MEATLOAF
PLACE THE MEATLOAF IN THE SMOKER, & LET IT SMOKE FOR 4 HOURS
AT AROUND 3 HOURS INTO THE SMOKING, BASTE THE MEATLOAF WITH A KANSAS BBQ SAUCE....DO IT AGAIN IN A 1/ 2 HOUR
AT 4 HRS USE A MEAT THERMOMETER, TO UNSURE THE MEATLOAF HAS COOKED THROUGH
TAKE IT OUT OF THE SMOKER, & LET IT REST....THEN SERVE, WITH WHATEVER
SUITS YOUR FANCY
( MYSELF, A MEATLOAF SANDWICH WITH MUSTARD IS MY ALL TIME FAVOURITE WAY TO EAT IT...YUM !!!! )
